Grease Interceptor Maintenance

Grease interceptors (large outdoor, underground units) will  be cleaned by a grease pumper. Grease interceptor maintenance consists of removing the entire volume (liquids and solids) from the grease interceptor and disposing of the material in accordance with all federal, state, and local laws.

How Often Should an Interceptor be Serviced

The required maintenance frequency for a grease interceptor depends greatly on the amount of fats, oil, and grease (FOG) a facility generates as well as any best management practices (BMPs) that the establishment implements to reduce the FOG discharged into its sanitary sewer system. In many cases, an establishment that implements BMPs will realize financial benefit through a reduction in their required grease interceptor maintenance frequency.

When does the interceptor need pumping?

 
A grease interceptor must be serviced when the contents in the device reach 25% of its capacity
For example: If the depth of water in the unit is 48 inches [base to outlet] then the unit must be emptied by the time the accumulation of grease, oil, or solids or any combination of the waste is 12 inches.
Best management practices (BMPs)

 

Restaurants and kitchens that use BMPs often see less problems with backups, and may also extend the time between pumpouts. 
 
 
 
 

 

 
BMPs are designed to reduce the amount of fats, oils, and grease(FOG) in the wastewater of the establishment.
These include:
 
 
1. Proper training of the employees, on the problems associated with FOG and their proper disposal.

2. Minimizing the use of garbage disposals.

3. Installing a 1/8″ or 3/16″ mesh screen over all kitchen sinks, mop sinks, and floor drains.

4. Use “dry” clean-up methods, including scraping FOG from plates and cookware before washing.

5. Recycling FOG and beneficial food waste when possible.

Grease trap (small indoor unit) maintenance is usually performed by maintenance staff or other employees of the food service establishment. When performed properly and at the appropriate frequency, grease trap cleaning can reduce the discharge of fats, oil, and grease (FOG) into the wastewater collection system.
